WHAT IS ALLULOSE?Allulose is a monosaccharide that occurs naturally in very small amounts in certain foods. In 1942, researchers F. W. Zerban and Louis Sattler isolated and identified allulose in cane molasses, which is obtained during the production of sugar from sugarcane. Allulose is also known to occur in small amounts in foods including wheat, raisins, dried figs, and molasses.WHY HAS ALLULOSE GAINED ATTENTION?One important reason allulose has gained attention as a food ingredient is that it provides sweetness while contributing far fewer calories than traditional sugar.Traditional sugar provides about 4 kcal per gram, while U.S. FDA guidance allows a general factor of 0.4 kcal per gram to be used for allulose when calculating calories on Nutrition Facts labels — about one-tenth on a per-gram basis.Allulose provides sweetness in foods and drinks while contributing relatively few calories.HOW IS ALLULOSE PRODUCED?Because allulose occurs naturally in only very small amounts, obtaining commercially useful quantities by extracting it directly from foods is difficult.Today, commercial allulose is generally produced from fructose. Enzymes are used to convert fructose into allulose, after which the allulose is separated and purified.
